Chocolate Chip and Banana Cookies
Ingredients for approximately 12 cookies:
- 125g (4oz) Unsalted Butter
- 90g (3oz) Soft Light Brown Sugar
- 90g (3oz) Caster Sugar
- 200g (7oz) Plain Flour
- 2-3 Drops of Vanilla Extract
- 1 Banana
- 1 Pinch of Salt
- 1/2 tsp of Baking Powder
- 150g of Milk Chocolate Chips (or whichever kind you prefer)
- Preheat the oven to 180 degrees Celsius/350 degrees Fahrenheit/Gas mark 4.
- Cream the butter and both types of sugar together in a large bowl until the mixture turns creamy.
- Mash the banana and add it and the vanilla extract to the sugar and butter. Mix the ingredients until they are fully mixed in.
- Sieve the flour, baking powder and salt into the bowl and mix in all the ingredients.
- Stir in the chocolate chips.
- Spoon 5-6 heaped desert spoonfuls of the cookie dough onto your baking tray, leaving plenty of space between each mound so they can spread as they cook.
- Bake the cookies for 14 minutes.
- Take the trays out of the oven and leave the cookies to set for 2-3 minutes.
- When the cookies have set, transfer them to a cooling rack.
