Post Your Favourite Recipe: Day Twenty Seven

I have a lot of recipes that I like, including healthy and unhealthy, savoury and sweet but this recipe is one I have been loving recently as it's so easy yet delicious. The recipe originally came from a children's cookbook that I've had for years, but I decided to put my own spin on it, and it seemed to work really well.

Chocolate Chip and Banana Cookies

Ingredients for approximately 12 cookies:

  • 125g (4oz) Unsalted Butter
  • 90g (3oz) Soft Light Brown Sugar
  • 90g (3oz) Caster Sugar
  • 200g (7oz) Plain Flour
  • 2-3 Drops of Vanilla Extract
  • 1 Banana
  • 1 Pinch of Salt
  • 1/2 tsp of Baking Powder
  • 150g of Milk Chocolate Chips (or whichever kind you prefer)
  1. Preheat the oven to 180 degrees Celsius/350 degrees Fahrenheit/Gas mark 4.
  2. Cream the butter and both types of sugar together in a large bowl until the mixture turns creamy.
  3. Mash the banana and add it and the vanilla extract to the sugar and butter. Mix the ingredients until they are fully mixed in.
  4. Sieve the flour, baking powder and salt into the bowl and mix in all the ingredients.
  5. Stir in the chocolate chips.
  6. Spoon 5-6 heaped desert spoonfuls of the cookie dough onto your baking tray, leaving plenty of space between each mound so they can spread as they cook.
  7. Bake the cookies for 14 minutes.
  8. Take the trays out of the oven and leave the cookies to set for 2-3 minutes.
  9. When the cookies have set, transfer them to a cooling rack.
  10. Bon appetite!
