Sweet and Spicy Quinoa Salad Recipe

The amino acids in protein make up the chemicals that your brain needs to regulate your thoughts and feelings. Quinoa is gluten-free, vegan and high in protein which makes it a great option for non-meat eaters and meat eaters alike. This sweet and spicy salad makes a great snack, meal or meal accompaniment by including plenty of minerals, vitamins and fibres that we need in order to keep physically and mentally healthy. This recipe makes for 3 servings, ideal for busy lives so you can meal prep as well as enjoying it fresh. 

Ingredients:


1.5 cups of quinoa
1 bell pepper
1/4 cucumber
1/2 pomegranate
1 chilli
A handful of grapes
A handful of cherry tomatoes

Method:

1. Boil the quinoa on a medium to high heat with 2.5 cups of water for 15 minutes or until the water has soaked up.

2. Leave to cool.

3. Slice the grapes and cherry tomatoes in half, chop the pepper and cucumber into small pieces, scoop out the pomegranate seeds and slice the chilli.

4. Place the fruits and vegetables in a large mixing bowl.

5. Once the quinoa has cooled, add it to the large mixing bowl and stir all of the ingredients together.

6. Serve on its own or alongside the rest of the meal, we recommend serving with avocado, an omelette or halloumi.

7. Place the remaining servings into individual containers and keep in the fridge until serving.

It's such a simple recipe and easy to make in batches for upcoming meals plus it's healthy and delicious.
